FAT BOMBS – Nut Butter and Chocolate Cups
Fat Bombs are so incredibly delicious and good for you. These are one of my all-time favorites. It delivers high fat and protein and tastes amazing. It also fills you up for ages!! Perfect snack.
I’m not one for measuring when I cook. I love to just wing it and taste along the way. So you may not follow these amounts exactly. Play around with it and work out how you like it.
This will make around 12 muffin size cups.
Coconut oil 2 cups
Cocoa 2-3 tablespoons
Almonds 2 cups
Cashews 1 cup
Macadamia oil 2-3 tablespoons
For the nut butter, I use a thermomix. All you need to do is add the ingredients and blend for around 30 seconds.
Add the coconut oil into a bowl, add the cocoa and stir until blended. Start adding stevia, continue to add and taste until you get your desired sweetness.
Prepare a muffin tin with patty pans. Place 1-2 tablespoons of the chocolate mix into the base of each patty pan and place in the freezer for about 10-15 minutes.
Once chocolate is hard remove from freezer. Add nut butter mix until patty pan about 3/4 full. Top with another 1-2 tablespoons of chocolate. Do this for each patty pan. Put back in the freezer.
You should be able to eat after about 15 minutes.
